Aramis Vineyards White Label Sparkling Pinot Grigio
Aramis white wines are all made in the cooler climate of the beautiful Adelaide Hills. Fruit for this sparkling Pinot Grigio is taken from the same parcel as Aramis’s still wine – sourced from a single block nestled between Mount Torrens, Gumeracha and Birdwood. An undulating piece of land with a predominantly northern aspect.
The sole aim is to highlight the delicate but distinctive fruit characters of cool-climate Grigio, and for this reason they do not pursue extended lees contact or barrel work. The fruit was night harvested, crushed, chilled and immediately pressed before being racked to stainless steel tanks to retain freshness and vivacity. The wine underwent secondary fermentation (Charmat method) before bottling.
A cooler-than-usual spring and summer combined with heavy rainfall to create challenging conditions and delayed ripening across the Adelaide Hills. However this resulted in a longer hang-time and in fact created great concentration of flavour in the fruit when eventually harvested! Overall quality is considered very good.
