An archetypal Riesling grown over slate, the Sevenhill is pale, zesty and racy; it has a beautiful tension between it’s delicate but intense fruit and it’s piercing acidity. On the nose there’s buckets of lemons, both juice and zest, together with the distinctive minerality that Riesling so often picks up when grown on slate – of all the white grapes Riesling is the most sensitive to the terroir in which it is grown and this is part of what makes it such a fascinating variety. There’s some green apple too which gives flesh both to the nose and palate. Beautiful now (oysters anyone?) and a sure bet in the cellar.
Pair this beautiful Riesling with Garfish or Tommy Ruff ceviche, grilled King George Whiting, fresh grilled fish tacos with a tomato radish salsa and coriander or a pear, rocket, walnut and parmesan salad.
