“At St Hallett, we adhere to a philosophy of minimum intervention and maximum attention, allowing the unique terroir to shine through. The Shiraz vineyards on black cracking clay soils are treated with utmost care, crushed, and fermented separately for 6 to 8 days at precisely 22 to 24 degrees Celsius. Post fermentation, the wine undergoes partial maturation in American and French Oak, intensifying the fruit’s vibrancy. The result is a wine that captures the essence of this distinct soil type.”
