A small proportion of fruit comes from the sandier sites on the hillside, adding freshness and elegance to the blend. The wine is fermented on skins for five days, then matured for around 12 months, with a proportion matured in French oak barrels to add complexity and structure.

Season 2021 vintage in Padthaway is one to remember with near perfect conditions. Dry and warm weather during flowering led to really good berry set that happened quickly, resulting in even ripening of the fruit. Very few heat/rain events meant fruit flavours had maximum time to develop, allowing harvest to occur when parcels were ready.
Maturation Fermented on skins for 5 days. Matured for around 12 months and a proportion was matured with French oak, but the majority was un-oaked to allow the fruit to shine.
